This Easter crack (saltine cracker toffee with Mini Eggs) is an easy, sweet and salty treat made with buttery toffee, smooth milk chocolate, and colorful candy eggs. It’s simple to make, perfectly crunchy, and ideal for Easter desserts, gifting, or snacking.

I originally got the idea for this version when I started seeing all kinds of desserts popping up with Mini Eggs around Easter. It got me thinking… I’ve made my saltine cracker toffee so many times—why not try an Easter version?

This batch ended up being extra special because I made it while my mom and sister were visiting from New Brunswick during March break. We all got to spend a full week together, and with Paul working so much lately, it was really nice having everyone in one place again.

Between my boys, Donnie and little Richard, and all of us just spending that time together, it felt like one of those really full, happy weeks at home.

It also turned into a bit of a birthday stretch in our house! Donnie’s birthday landed during their visit, my mom’s was the day after, and mine followed a few days later—so there were lots of reasons to have something sweet around 😊

I actually made my mom a cherry cheesecake for her birthday too, but this Easter crack was the easy, snackable treat we kept coming back to all week.

I hope you enjoy this recipe! ❤️ If you give it a try, please let me know how it turned out for you in the comments section at the bottom of the page or share a pic of your om noms on Instagram and tag @dishesanddustbunnies! ❤️

How to make Easter Crack (Saltine Cracker Toffee with Mini Eggs) – Overview

Sprinkle the Mini Eggs over top, then gently tap the tray on the counter to help them settle into the chocolate without messing up the surface. Chill until set, then break into pieces and enjoy!

Recipe Variations & Substitutions

This Easter crack is a fun seasonal twist on classic saltine cracker toffee, but you can easily switch things up depending on what you have on hand.

  • Try semi-sweet or dark chocolate for a less sweet version
  • Swap Mini Eggs for other seasonal candies or toppings
  • Add a light sprinkle of flaky sea salt for extra contrast

Frequently Asked Questions

Why is my saltine cracker toffee chewy instead of crunchy?
This usually means the toffee wasn’t cooked long enough. It should boil for 3–4 minutes and become quite thick—almost like a glue—before pouring it over the crackers so it sets properly.

Why are my crackers soggy?
Soggy crackers usually happen if the toffee didn’t fully cover them or wasn’t thick enough. Make sure the toffee has thickened properly and that all the crackers are evenly coated before baking.

Do I need to crush the Mini Eggs?
No, you can leave them whole. Some will naturally crack when you break the toffee into pieces, and that’s completely normal.

How do I keep the chocolate layer smooth?
Let the chocolate chips sit for a few minutes after baking before spreading. Then gently tap the tray on the counter after adding the toppings so everything settles without leaving marks.

Storage, Freezing & Shelf Life

Storage
Store the Easter crack in an airtight container at room temperature for up to 5 days. If your kitchen is warm, you can keep it in the refrigerator to help the chocolate stay firm.

Freezing
You can freeze this toffee in an airtight container for up to 2 months. Let it sit at room temperature for a few minutes before serving so it’s easier to bite into.

What Can I Serve This With?

This Easter crack is perfect on its own as a sweet snack, but it also works really well as part of a dessert spread—especially for holidays, gatherings, or casual get-togethers.

Serve it alongside other simple treats like cookies, bars, or brownies for an easy mix of options. It’s also great to add to dessert trays or snack boards when you want something quick, colorful, and crowd-pleasing.

You can even package it up in small bags or containers to share as a homemade treat for friends, family, or neighbors.

Description

This Easter crack (saltine cracker toffee with Mini Eggs) is an easy, irresistible treat made with buttery toffee, smooth milk chocolate, and crunchy candy-coated chocolate eggs. It’s sweet, salty, and perfect for sharing—whether you’re making a quick Easter dessert or a fun homemade candy everyone will love.

Ingredients

Scale
  • 1 sleeve saltine crackers (enough to cover a baking sheet)
  • 1 cup unsalted butter
  • 1 cup brown sugar (packed)
  • 1½ cups milk chocolate chips – use more if you like!
  • 1 bag Cadbury Mini Eggs (about 1 lb / 400450 g)

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper. Arrange saltine crackers in a single layer to cover the sheet.
  2. In a saucepan over medium heat, melt the butter and brown sugar together. Bring to a boil and let it bubble for 3–4 minutes, stirring constantly, until thickened.
  3. Pour the toffee mixture evenly over the crackers and spread gently.
  4. Bake for 5 minutes, until bubbly.
  5. Remove from the oven and immediately sprinkle milk chocolate chips over the top. Let sit for 2–3 minutes to soften, then spread into an even layer.
  6. Sprinkle the Mini Eggs evenly over the melted chocolate.
  7. Lift the baking sheet slightly and gently tap it on the counter a few times to help the Mini Eggs settle into the chocolate.
  8. Refrigerate for about 1 hour, or until fully set.
  9. Break into pieces and serve.

Notes

Tapping the tray helps the Mini Eggs settle into the chocolate without leaving fingerprints, keeping the chocolate smooth and the toppings neat without needing to press them down.

Some Mini Eggs will naturally crack when you break the toffee into pieces, but leaving them whole gives the best texture and appearance—you can chop them beforehand if you prefer smaller pieces.

You may not need the entire bag, but using plenty gives that thick, bakery-style topping.

Don’t overcook the toffee—3–4 minutes of bubbling is perfect.

Store in an airtight container at room temperature for up to 5 days or refrigerate for longer storage.
