Thai Mango Salad


  • 3 large green mangoes, firm and not ripened, sliced into thin strips or julienned
  • 2 cloves garlic, minced
  • 2 green onions, sliced diagonally
  • ¼ cup cilantro, roughly chopped
  • 1 large red pepper, thinly sliced
  • ¼ cup unsalted peanuts, chopped

  1. Combine ingredients for the dressing in a medium mixing bowl.
  2. To the bowl, add mangoes, red pepper, and cilantro. Combine.
  3. Before serving, sprinkle chopped peanuts over top.
