Mexican Corn Salad

Ingredients

  • 3 1/2 cups corn (fresh or frozen – if frozen thaw)
  • 1/2 cup mayonnaise
  • Juice of 1 lime
  • 1/4 tsp chipotle powder
  • 1/2 tsp coriander
  • 1 2/3 cups Mexican cojita cheese (you can use feta as a substitute), cubed
  • 1/4 cup fresh cilantro, chopped
  • 1 clove garlic, minced
  • 2 green onions, chopped
  • 1 avocado, cut into cubes

Instructions

  1. Combine all ingredients, adding the avocado chunks last.
  2. Gently stir in the avocado chunks.
  3. Allow to chill in the fridge for at least 20 – 30 minutes before serving.
  4. Serve as a side salad or with tortilla chips for scooping up the yummyness! 🙂
