Ginger Sesame Bok Choy

Bok choy has got to be one of my favourite veggies. It seems like any time I visit a Chinese restaurant I just have to have something with bok choy in it.

Today I'm sharing with you a delicious and easy way to prepare this awesome veggie at home without having to pay for take out!

Ginger Sesame Bok Choy

If you’ve never had bok choy before, I would compare its dark green leaves to spinach and its light green crunchy part to something like a thick lettuce.  Maybe that’s not exactly a perfect description of bok choy but that’s how I think of it!

Bok choy makes a great side dish with any Asian foods such as noodles, rice, etc. and is very healthy.  I find that while it does have its own distinct earthy flavor, the leaves will take on much of the flavours you cook it with.

Ginger Sesame Bok Choy

In this recipe, I stir fry the bok choy in a wok with some fresh garlic and ginger.

Once the bok choy begins to soften a little bit, I add a sauce mixture made from a combination of oyster sauce, chicken broth, finely ground white pepper and a little bit of cornstarch. The cornstarch thickens the sauce a little bit – so it’s just right.  🙂

Once the bok choy have finished cooking, I toss them in some sesame oil. This gives the bok choy a really nice flavour when combined with the garlic and ginger.

It takes very little time to make this side dish fragrance of the ingredients, especially the sesame oil is just amazing when it lands on your plate and under your nose!

Ingredients

  • 2 lbs bok choy, washed and cut in half lengthwise
  • 3 cloves garlic, minced
  • 1/2 inch fresh ginger, minced
  • 2 tbsp oyster sauce
  • 1 cup chicken broth or stock
  • 1 1/2 tbsp cornstarch
  • 1/8 tsp white pepper
  • 2 tbsp peanut oil
  • 1 tsp sesame oil
  • Sesame seeds, for garnish (optional)

Instructions

  1. Heat peanut oil in wok at medium heat.
  2. Add garlic and ginger to the wok and stir for about 1 minute until fragrant.
  3. Combine other ingredients in a measuring cup, except for the bok choy and sesame oil. Whisk everything together so there are no lumps.
  4. Add the bok choy to the wok and stir it around so hat garlic and ginger coats it well.
  5. Once the bok choy begins to soften slightly, add the contents of the measuring and stir around so it coats everything well.
  6. After about 5 minutes or so the bok choy should be ready.
  7. Add sesame oil and toss to coat.
  8. Remove from heat and serve immediately.
  9. Sprinkle with sesame seeds if desired.
