Description

This easy baked chicken Alfredo pasta is a creamy, cheesy dinner made with simple ingredients and cooked chicken. Perfect for using rotisserie chicken, it can be baked in individual portions or as a family-style dish for a cozy, satisfying meal any night of the week.


Ingredients

  • 12 oz spaghetti (or any pasta you prefer)
  • 1 (15 oz) jar Alfredo sauce (such as Classico, or use my homemade Alfredo sauce)
  • 2 cups cooked chicken breast, chopped (rotisserie or leftover works well)
  • Optional –  ½ cup chopped sun-dried tomatoes (dry packed, not the kind in oil)
  • 1½ cups shredded mozzarella cheese
  • 2 tablespoons chopped fresh parsley (for garnish)

Equipment

  • 4 (20 oz) oven-safe personal-sized baking dishes (for individual servings, as seen in the photos for this recipe post)
    OR 1 (9×13) baking dish (for family-style serving)

Instructions

  1. Cook the spaghetti according to package directions until al dente. Drain and set aside.
  2. In a large bowl, combine the cooked spaghetti, Alfredo sauce, chopped chicken, and sun-dried tomatoes. Mix well so everything is evenly distributed.
  3. Transfer the mixture into either 4 personal-sized baking dishes (for individual servings) or one 9×13 baking dish (for family-style serving). The photos for this recipe show the individual portions, but both methods work well. Make sure the chicken and toppings are evenly divided so each serving gets a good amount.
  4. Sprinkle shredded mozzarella evenly over the top.
  5. Place under the broiler until the cheese is melted and lightly golden.
  6. Remove from the oven and let sit for 5–8 minutes before serving.
  7. Sprinkle with chopped fresh parsley just before serving.

Notes

The ingredient amounts are flexible—feel free to add more or less chicken and sun-dried tomatoes based on your preference.

This recipe makes about 4 servings, but if you’re using a 9×13 baking dish for a family-style version, you can increase the ingredient amounts to feed more people and it will still work well.

Rotisserie chicken works great here and keeps this recipe quick and easy.

You can substitute homemade Alfredo sauce if preferred.
