Make your own Chipotle Butter!

Sometimes for lunch I feel like just having a plain old classic grilled cheese sandwich.  Honestly sometimes that's all I have time to make when Donnie's pulling on my legs or when he's throwing his lunch all over the place from his highchair.  There's nothing wrong with a good ol' grilled cheese sandwich but I came up with very simple way to enhance the already yummy comfort food.

Here's a twist on the classic grilled cheese using chipotle butter!

Chipotle Grilled Cheese SandwichI whipped up some chipotle butter by mixing about 1/2 a teaspoon of ground chipotle pepper with about 3 tbsps of softened unsalted butter.  Don't worry, I didn't use that whole mixture on one sandwich – I actually made this the night before to use as a topping for roasted corn on the cob.  I mixed up the butter with the chipotle in a little container and left it to intensify it's yummyness in the fridge overnight.

When it was time for lunch the next day, I just made a grilled cheese sandwich like normal but used the chipotle butter instead of plain butter.

The chipotle flavor was not overly intense at all but gave the sandwich a nice subtle smokiness and a hint of spice. It was sooo good and such a simple way to put a new twist on an old classic!
