  • 24 small meatballs (about 1 inch in diameter, homemade or store-bought)
  • 20 slices of provolone cheese
  • 2 tbsps chopped fresh parsley
  • Optional toppings: grated parmesan, shredded mozzarella, fresh mozzarella, Italian seasoning, red pepper flakes

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the Meatballs: If using homemade meatballs, cook them according to your recipe. If using store-bought, follow the package instructions to heat them through.
  3. Heat the Pizza Sauce with Meatballs: In a saucepan, warm the pizza sauce over medium heat. Add the meatballs to the sauce and heat until both the sauce and meatballs are heated through.
  4. Slice and Toast the Buns: Slice each sub sandwich bun partially lengthwise, making sure not to cut all the way through. The top of the bun should remain connected to the bottom along one side, creating an opening. Open up the buns enough to toast the inside. Place the buns on a baking sheet and toast them in the preheated oven for about 5 minutes, or until the insides are lightly crispy.
  5. Assemble the Sandwiches: Remove the toasted buns from the oven. Lay 3 slices of provolone cheese inside each bun. Spoon some of the heated pizza sauce with meatballs inside each bun, then place 6 meatballs into each bun.
  6. Add More Cheese: Lay 2 additional slices of provolone cheese over the meatballs in each sandwich.
