Description

Juicy baked ground chicken meatballs tossed in a sticky honey garlic sauce and served over rice with steamed broccoli. These easy honey garlic chicken meatballs are packed with sweet, savory flavor and make a perfect weeknight dinner or meal prep recipe.

For the meatballs:

  • 2 lbs lean ground chicken
  • 1 cup breadcrumbs
  • 2 eggs
  • 4 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp soy sauce
  • 1 tsp onion powder

For the honey garlic sauce:

  • ¾ cup honey
  • ½ cup soy sauce
  • 46 cloves garlic, minced
  • 1 tbsp rice vinegar (or apple cider vinegar)
  • 1½ tbsp cornstarch
  • 3 tbsp water

For serving:

  • Cooked rice
  • Steamed broccoli
  • Green onions or sesame seeds (optional garnish)

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground chicken, breadcrumbs, eggs, garlic, salt, pepper, soy sauce, and onion powder. Mix just until combined—avoid overmixing.
  3. Roll the mixture into meatballs about 1 to 1½ inches in size and place them evenly on the prepared baking sheet.
  4. Bake for 18–20 minutes, or until the meatballs are fully cooked and lightly golden.
  5. While the meatballs bake, add the honey, soy sauce, garlic, and vinegar to a saucepan over medium heat. Bring to a gentle simmer.
  6. In a small bowl, whisk together the cornstarch and water until smooth. Stir the slurry into the sauce.
  7. Continue simmering the sauce for a few minutes, stirring frequently, until thickened and glossy.
  8. Add the cooked meatballs to the sauce and gently toss until fully coated.
  9. Serve the meatballs over rice with steamed broccoli and extra sauce spooned over top.

Notes

Don’t overmix the meatball mixture or the meatballs can become dense.

Use 6 cloves of garlic in the sauce for a stronger garlic flavor.

If the sauce thickens too much, stir in a splash of water to loosen it.

These meatballs reheat well and are great for meal prep lunches.
