Description

Soft, tender mini pizzas made with simple ingredients and baked low for a perfectly melty, kid-friendly texture. Great for easy lunches and make-ahead meals.


Ingredients

  • 2 pizza dough balls (fresh, homemade, or frozen; ~250–300g each)
  • ½ cup pizza sauce (thick is best but any kind is ok; see notes)
  • 8 slices Havarti cheese (or cheese of choice; see notes)
  • 12 tbsp olive oil (optional)

Instructions

  1. If using frozen dough, thaw it overnight in the fridge ahead of time. Before shaping, let it sit at room temperature until soft and slightly puffy.
  2. Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
  3. Divide each dough ball into 4 portions. Roll into balls, then flatten into rounds about ¼ inch thick, keeping them flat with no raised edge.
  4. Lightly dock each piece with a fork to prevent bubbling.
  5. Lightly brush the tops with olive oil if desired.
  6. Let the shaped dough rest for 20–30 minutes until slightly puffed.
  7. Spread a thin layer of pizza sauce on each piece, then top with a slice of cheese. Keep toppings light to prevent sogginess.
  8. Bake for 10–12 minutes, until the cheese is melted and the dough is fully set. Keep the tops pale—do not allow browning.
  9. Let cool slightly before serving, or cool completely before freezing if desired.

Notes

If using frozen dough, thaw overnight in the fridge before starting

Any pizza sauce works, but a thicker sauce (like a tomato paste-based homemade version) helps prevent soggy pizzas

Havarti creates an especially soft, creamy melt, but other cheeses can be used if preferred

Docking the dough helps keep the pizzas flat and prevents air bubbles

Keep toppings minimal for best texture

Bake at a low temperature (325°F) to keep the pizzas soft and prevent browning—these are meant to be soft and bread-like, not crispy
