This is an example of a pasta salad made using leftover ingredients I had on hand. Use this as a flexible guide—you can swap in different dressings, add-ins, or amounts based on what you have in your fridge. I’ll continue updating this post over time with more combinations and ideas.

  • 6 cups cooked leftover pasta – I used rotini this time 
  • ½ cup salad dressing – for this version, I used orange French Dressing
  • ½ cup sour cream
  • ½ cup mayonnaise
  • ¼ cup finely chopped red onion
  • 2 tomatoes, chopped with seeds removed
  • 2 tbsp sweet green relish
  • 12 tbsp apple cider vinegar (to taste)
  • ½ tsp garlic powder (or to taste)
  • Salt and pepper, to taste

Instructions

  1. In a large mixing bowl, combine the salad dressing (I used orange French dressing), sour cream, mayonnaise, red onion, tomatoes, and sweet green relish.
  2. Add the garlic powder, a small amount of vinegar (such as apple cider vinegar), and a pinch of salt and pepper.
  3. Mix well, then taste and adjust as needed—adding more vinegar for tang, or more mayonnaise or sour cream to adjust the thickness and creaminess.
  4. Add the cooked rotini and toss until everything is well coated.
  5. Taste again and adjust seasoning if needed.
  6. Serve immediately or refrigerate for about 30 minutes before serving for best flavor.

Notes

This recipe is meant to be flexible—use what you have and adjust as needed.

You can use any salad dressing. If using a vinegar-based dressing, you may need less additional vinegar.

Any vinegar you have on hand will work—adjust the amount to balance the flavor.

Removing the seeds from the tomatoes helps keep the salad from becoming watery.

The balance of creamy, tangy, and slightly sweet flavors is key—taste as you go and adjust to your preference.
