  • 1 medium onion, thinly sliced
  • 8 ounces mushrooms, sliced
  • 2 teaspoons thyme
  • 3 tablespoons ketchup
  • ¼ teaspoon Dijon mustard
  • ½ teaspoon soy sauce
  • 4 cups beef stock (reduced sodium preferred)
  • 1½ teaspoons Worcestershire sauce
  • ½ teaspoon beef bouillon powder
  • ¼ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 3 tablespoons all-purpose flour
  • Handful of chopped fresh parsley (optional, for garnish)

Instructions

  1. In a large skillet over medium to medium-high heat, melt the butter.
  2. Add the sliced onions and cook for 6–8 minutes, stirring occasionally, allowing them to soften and lightly brown. Don’t rush this step — the browning adds important flavor.
  3. Add the sliced mushrooms and cook for another 6–8 minutes. Let them sit undisturbed at times so they can brown properly, then stir. Cook until the mushrooms release their moisture and develop golden edges.
  4. Stir in the thyme, ketchup, Dijon mustard, soy sauce, Worcestershire sauce, beef bouillon powder, onion powder, and garlic powder until well combined.
  5. Sprinkle the flour evenly over the mushroom and onion mixture, stirring constantly, and cook for about 2 minutes to eliminate the raw flour taste.
  6. Slowly pour in the beef stock while stirring, scraping up the browned bits from the bottom of the skillet — this is where a lot of the gravy’s flavor comes from.
  7. Bring the gravy to a gentle boil, then reduce the heat and simmer for about 5 minutes, or until thickened to your desired consistency.
  8. Taste and adjust seasoning if needed, then stir in chopped parsley just before serving, if desired.

Notes

Taking the time to brown the onions and mushrooms is key to building rich, savory flavor in this gravy. Let them sit in the pan occasionally so they can develop color before stirring.
