- 1 lb ground beef
- 1 packet taco seasoning
- ½ cup salsa (plus more for topping)
- 6 small flour tortillas (cut into rounds to fit muffin tin)
- 1 cup shredded cheddar cheese
- Sour cream, for topping
- Additional salsa, for topping
- Lime wedges, for serving
- Nonstick cooking spray for greasing the muffin tin
Instructions
- Preheat the oven to 375°F. Grease a 12-cup muffin tin with nonstick cooking spray.
- Cut the tortillas into rounds and press them into the muffin tin to form the base. Bake the tortillas for 5-7 minutes, or until they begin to crisp up and turn lightly golden. This will help create a crispy shell for your taco cups.
- Remove the muffin tin from the oven and let the tortillas cool slightly before filling them with the beef mixture.
- In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
- Stir in the taco seasoning and 1/2 cup salsa. Cook for another 2 minutes until well combined.
- Spoon the beef mixture into each tortilla cup. Top with shredded cheddar cheese.
- Bake for 10-15 minutes, or until the cheese is melted and the tortillas are golden brown.
- Remove from the oven and let cool slightly. Top each taco cup with additional salsa, sour cream, and a squeeze of lime juice.
