  • 1 lb ground beef
  • 1 packet taco seasoning
  • ½ cup salsa (plus more for topping)
  • 6 small flour tortillas (cut into rounds to fit muffin tin)
  • 1 cup shredded cheddar cheese
  • Sour cream, for topping
  • Additional salsa, for topping
  • Lime wedges, for serving
  • Nonstick cooking spray for greasing the muffin tin

Instructions

  1. Preheat the oven to 375°F. Grease a 12-cup muffin tin with nonstick cooking spray.
  2. Cut the tortillas into rounds and press them into the muffin tin to form the base. Bake the tortillas for 5-7 minutes, or until they begin to crisp up and turn lightly golden. This will help create a crispy shell for your taco cups.
  3. Remove the muffin tin from the oven and let the tortillas cool slightly before filling them with the beef mixture.
  4. In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
  5. Stir in the taco seasoning and 1/2 cup salsa. Cook for another 2 minutes until well combined.
  6. Spoon the beef mixture into each tortilla cup. Top with shredded cheddar cheese.
  7. Bake for 10-15 minutes, or until the cheese is melted and the tortillas are golden brown.
  8. Remove from the oven and let cool slightly. Top each taco cup with additional salsa, sour cream, and a squeeze of lime juice.
  9. Serve and enjoy!
