Instructions

  1. In a medium bowl, combine the imitation crab, celery, lemon juice, and mayonnaise.
  2. Season with salt and pepper to taste and mix until well combined.
  3. Divide the crab salad mixture evenly between 3 slices of bread and spread into an even layer.
  4. Top with the remaining slices of bread to form 3 sandwiches.
  5. Using a serrated bread knife, trim the crusts from each sandwich for the cleanest cuts and best presentation.
  6. Cut each sandwich diagonally into 4 triangles so that each full sandwich becomes 4 tea sandwiches.
  7. Arrange on a serving tray and serve immediately or refrigerate until ready to serve.

Notes

Soft white bread gives these tea sandwiches their classic texture and appearance.

For the cleanest cuts, use a serrated bread knife when trimming the crusts and cutting the sandwiches.

Finely chopping the celery helps create a smoother filling that’s easier to spread and serve in tea sandwiches.

Fresh lemon juice adds brightness and helps balance the richness of the mayonnaise.
