Description

These easy bacon wrapped oysters are a sweet, smoky, and slightly spicy appetizer that’s surprisingly budget-friendly, made quickly in the air fryer or oven and finished with a bright squeeze of fresh lemon.


Ingredients

  • 1 (85 g / 3 oz) can smoked oysters, drained well (about 1215 oysters)
  • 68 strips precooked bacon, cut in half
    (½ strip per oyster; amount depends on oyster count)
  • 23 tablespoons brown sugar, for sprinkling
  • ½1 teaspoon hot sauce
    (about 1 small drop per oyster)
  • ¼ lemon (1 wedge), freshly squeezed
  • Toothpicks
  • Parchment paper or air fryer liner

Instructions

Prep

  1. Drain the oysters well and pat dry with paper towels.
  2. Wrap each oyster with ½ strip of precooked bacon and secure with a toothpick.
  3. Line an air fryer basket or baking sheet with parchment paper.
  4. Arrange the oysters in a single layer.
  5. Sprinkle brown sugar generously over each oyster and add one small drop of hot sauce on top.
  6. Cook the wrapped oysters according to the instructions below using either the air fryer or the oven.

Air Fryer Method

  1. Preheat the air fryer to 400°F (205°C).
  2. Air fry for 7–9 minutes, until the bacon is crispy and the brown sugar is melted and bubbling.
  3. Transfer to a serving platter, spoon any caramelized brown sugar drippings over the oysters, and finish with a liberal squeeze of fresh lemon juice.

Oven Method

  1. Preheat the oven to 425°F (220°C).
  2. Bake the prepared oysters for 10–12 minutes, until the bacon is crispy and the sugar is caramelized.
    Optional: Broil for 1–2 minutes at the end for extra crispiness.
  3. Transfer to a platter, spoon over any pan drippings, and finish with fresh lemon juice.

Notes

Since the bacon is precooked, cooking time is mainly to crisp the bacon and caramelize the sugar.

Watch closely near the end of cooking—brown sugar can burn quickly.

Adjust the amount of brown sugar and hot sauce to suit your taste.
