Instructions

Microwave Instructions – The EASY way!!

  1. Line a rimmed baking sheet with parchment paper and set aside.
  2. In a microwave-safe bowl, combine the sugar and corn syrup. Microwave on high for 3-5 minutes until the mixture becomes bubbly and golden.
  3. Stir in the peanuts, then microwave again on high for another 3-5 minutes.
  4. Add the butter and vanilla extract, stirring to combine. Microwave on high for 1-2 more minutes.
  5. Quickly stir in the baking soda until the mixture becomes light and foamy.
  6. Pour the mixture onto the prepared baking sheet and spread it out into a thin layer using a heatproof spatula.
  7. Let the brittle cool completely for 30 minutes to an hour before breaking it into pieces.

Alternate Traditional Stovetop Instructions

  1. Line a rimmed baking sheet with parchment paper and set aside.
  2. In a medium saucepan, combine the sugar and corn syrup with 1/4 cup water. Heat over medium, stirring constantly until the sugar dissolves.
  3. Attach a candy thermometer to the saucepan and bring the mixture to a boil. Cook without stirring until it reaches 300°F (hard crack stage).
  4. Remove from heat and quickly stir in the peanuts, butter, and vanilla.
  5. Add the baking soda and stir until light and foamy.
  6. Pour onto the prepared baking sheet, spreading into a thin layer.
  7. Let cool completely for 30 minutes to an hour before breaking into pieces.
